Ingredients

•           Chicken wings: 1,000 g

•           Honey: 60 g

•           Soy sauce: 30 g

•           Brown sugar: 12–15 g

•           Apple cider vinegar or lemon juice: 15 g

•           Garlic, minced: 6 g (2 cloves)

•           Ginger, grated (optional): 5 g

•           Vegetable oil: 15 g

•           Salt: 4–5 g

•           Black pepper: 1–2 g

•           Optional heat: 1–2 g chilli flakes or a small dash of hot sauce

Cooking instructions

1. Prepare the wings

Season the wings with salt, pepper, and oil. Toss to coat evenly.

2. Make the glaze

In a bowl, mix:

  • honey

  • soy sauce

  • brown sugar

  • vinegar

  • garlic

  • ginger (if using)

3. Bake the wings

  • Preheat oven to 200°C (fan 180°C).

  • Spread wings on a baking tray lined with foil or baking paper.

  • Bake for 25 minutes.

4. Glaze and finish

  • Remove wings from the oven and brush generously with the honey glaze.

  • Return to the oven for 10–15 minutes, turning once and brushing again halfway.

  • They should be golden, sticky, and slightly caramelised.

5. Serve

Let them rest for 5 minutes so the glaze thickens. Serve with sesame seeds, spring onions, or a squeeze of lime.

Chef ’s Notes

  • For extra crispiness, pat the wings dry before seasoning.

  • Add a teaspoon of smoked paprika for a deeper flavour.

  • If you want them spicier, mix chilli flakes into the glaze.
