HONEY GLAZED CHICKEN WINGS

Ingredients
• Chicken wings: 1,000 g
• Honey: 60 g
• Soy sauce: 30 g
• Brown sugar: 12–15 g
• Apple cider vinegar or lemon juice: 15 g
• Garlic, minced: 6 g (2 cloves)
• Ginger, grated (optional): 5 g
• Vegetable oil: 15 g
• Salt: 4–5 g
• Black pepper: 1–2 g
• Optional heat: 1–2 g chilli flakes or a small dash of hot sauce
Cooking instructions
1. Prepare the wings
Season the wings with salt, pepper, and oil. Toss to coat evenly.
2. Make the glaze
In a bowl, mix:
honey
soy sauce
brown sugar
vinegar
garlic
ginger (if using)
3. Bake the wings
Preheat oven to 200°C (fan 180°C).
Spread wings on a baking tray lined with foil or baking paper.
Bake for 25 minutes.
4. Glaze and finish
Remove wings from the oven and brush generously with the honey glaze.
Return to the oven for 10–15 minutes, turning once and brushing again halfway.
They should be golden, sticky, and slightly caramelised.
5. Serve
Let them rest for 5 minutes so the glaze thickens. Serve with sesame seeds, spring onions, or a squeeze of lime.
Chef ’s Notes
For extra crispiness, pat the wings dry before seasoning.
Add a teaspoon of smoked paprika for a deeper flavour.
If you want them spicier, mix chilli flakes into the glaze.
